SECOND COURSE DISHES

VICENTINA STYLE STOCKFISH

Venetian style liver

INGREDIENTS:
750gr of damp stockfish
75gr of "Grana" cheese
100gr of butter
50gr of anchovies
125gr of onion, 20gr of parsley
250gr of olive oil
125ml of milk
50gr of flour


PREPARATION:
Wash the damp stockfish and cut it into 15 cm long strips. Prepare a blend of mix composed of onion, parsley, anchovy and "Grana" cheese. In a crock pot place a layer of floured stockfish together with pepper, salt, an abundant spray of the blend of mix obtained above, oil, butter and continue until completion.
Heat it onto a cooking stove for about 10 minutes at low temperatures, add boiling milk and oil until the contents are completely covered. Let it simmer slowly and uncovered, for four hours.
