
RISOTTO with RADICCHIO from TREVISO

INGREDIENTS:
150gr of rise
100gr of radicchio from Treviso
one medium size onion
one litre of broth
a touch of white wine
oil, butter, parmesan cheese
PREPARATION:
In a saucepan place the oil, butter and finely chopped onion; allow the onion to dry up, add the radicchio that should be washed and cut up as for a salad, stir fry until a creamy blend is obtained.
Add the rice, allow it to flavour then add the white wine and allow it to evaporate. Sprinkle it slowly with boiling broth while stirring. Let it cook for about 15 minutes then add the parmesan cheese and serve.
